We finally got our <b>1971 Aristocrat Lo-Liner</b> trailer whipped into some semblence of shape...enough to take it out for a test run over Memorial Day Weekend. I needed to figure out a way to make charms for a bracelet that we gave to our former YW secretary. She left to go on a mission this week, and before she left we presented her with a nearly empty charm bracelet. It had one lone charm on it. We plan to send her a charm every month that she's gone...so they needed to be cheap and flat-ish. Thank you Pinterest for solving my dilemma. Quite a while ago I had pinned a charm bracelet with Shrinky Dink charms.<br />

I don't think I've ever actually bought Shrinky Dinks before. My poor children led a deprived childhood. I found these at Michael's and used some coupons...before coupon a 6 pack of white ink-jet compatible sheets was about $14. Lucky me, I had a 50% off coupon burning a hole in my pocket.<br />

There are 7 windows in it. Seven. They let in lots of light. Yay! You can enjoy the scenery of the great outdoors from pretty much anywhere in it. Yay!<br />

They also are all pretty much at eye level for anyone walking past, so privacy could be a bit of an issue. Especially at night.<br />

I had a couple of samples, but I wasn't in love with either of them - especially when it looked like it was going to run me at least $50. That's more money than I really want to spend on curtains. So today I headed out again.<br />

My plan was simple, check out Walmart...our little town (as of today) has 3 Walmarts. Three. Okay, technically at least one of them isn't in "town", but it's less than 5 miles from my house. <br />

I have to say, I wouldn't make a great photo journalist. Being on hand to take pictures of EVERY step in a project - hoping for some great ones. <br />

Frankly, sitting around taking pictures every few minutes isn't very appealing to me.<br />

Planner covers are kind of a thing in this mission. Usually people opt for destroying Ensigns in order to decorate their planners. That's what I usually do as well. I found a smokin' deal on craigslist and we managed to snag it. Problem? We did not have a vehicle to tow it yet. <br />

Luckily, Steve knows a guy...a guy with a big stinky Bronco (possibly from the late 70's), that he was willing to loan us. <br />
<br />
We knew we needed to hurry up and get our own towing vehicle...so we have spent more hours than I care to count in researching, calling, emailing, visiting dealerships (new and used), test driving (lather rinse repeat), to try and find something that would meet our needs without costing an arm and a leg.<br />

The <a href="http://itllfeelbetterwhenitquitshurting.blogspot.com/2013/04/meringue-cookies.html">fiasco of the lemon meringues</a> left me with a bit of a hole in the menu. Lucky for me I live in the golden age of technology. And by that, I mean Pinterest.<br />

I found a lovely recipe for <a href="http://www.marthastewart.com/315603/glazed-lemon-cookies">glazed lemon cookies</a> that didn't require me to make a trip to the store. I followed the recipe pretty closely except that I reduced the salt to 1/4 teaspoon (didn't miss the other 1/4 teaspoon).<br />
<br />
When it came to glazing the cookies, I simply dipped them in the glaze and then placed them on a wire rack. I ended up with twice as much glaze as I needed - so instead of throwing it away, I dropped an extra dollop on top of each cookie. The extra glaze made these cookies extra amazing.<br />

Chicken Alfredo PizzaIt's been almost 2 weeks since one of our kids was diagnosed with <a href="http://www.davita.com/kidney-disease/overview/stages-of-kidney-disease/stage-3-of-chronic-kidney-disease/e/4749">stage 3 chronic kidney disease</a> (CKD). One of the main guidelines for treatment (not cure - there isn't one), is to follow a strict low sodium/ low potassium diet. His doctor isn't worried about tracking phosphorus yet, but that may come also...adding yet another challenge...<br />

Cooking with low sodium isn't a particular challenge...it's the potassium that is really sneaky. <a href="http://www.nal.usda.gov/fnic/foodcomp/Data/SR17/wtrank/sr17a306.pdf">Nearly all foods have at least some potassium</a>...some quite a bit. For example, one medium size potato has about 1,000mg of potassium. When you're restricted to 2,000mg a day, well, you can see the problem. Milk products can be high in potassium, tomatoes, chocolate, legumes, whole grains, bananas, cantaloupe, avocados, etc., etc., etc...Add in high sodium food items such as, well, pretty much any processed food (ham, deli meats, packaged foods, etc.), and you can see that eating just anything that sounds good is going to be a challenge.<br />
<br />
My first recipe pretty much had to be pizza...since that's one of his favorite foods...and regular pizza has some issues...high sodium in most of the meat choices, and high potassium in tomatoes and milk products.<br />

<b><span style="font-size: large;">Pizza Crust </span></b><br />
(I wasn't really thinking when I had Danny make the crust - next time I'm going to experiment using 1/2 the salt)<br />
<br />
1 cup plus 2 tablespoons water<br />
2 tablespoons olive oil<br />
3 cups bread flour<br />
1 teaspoon sugar<br />
1 teaspoon salt<br />
2 1/2 teaspoons yeast<br />
2 tablespoons grated parmesan cheese<br />
1 1/2 teaspoons Mrs. Dash Tomato Basil Garlic blend.<br />

Dump all in the the bread machine on dough setting. When done, divide into six even pieces, spread out (as thick or thin as you'd like) on a baking sheet, brush lightly with olive oil and sprinkle with 1 teaspoon Parmesan cheese and 1/4 teaspoon Mrs. Dash. Let rise for about 15 -20 minutes then bake in 375' oven for about 10 minutes. At this point you can wrap them up and freeze them if you want...or just cover them with a cloth and use later in the day. Makes 6 8"pizza crusts.<br />
<br />
<b>Nutrition</b> (according to MyFitnessPal): per serving: 271 calories, 343mg sodium, 65mg potassium (this number should be a little higher - MFP didn't count potassium in the cheese - add another 2mg per pizza).<br />
<br />
<b><span style="font-size: large;">Cauliflower Alfredo Sauce</span></b><br />
4 teaspoons minced garlic<br />
2 tablespoons butter (salt free if you have it...I didn't)<br />
1 head of cauliflower<br />
water. lots of water.<br />
1 teaspoon Mrs. Dash Onion and Herb blend<br />
white pepper (to taste)<br />
1/2 cup milk (I used Rice Dream Original)<br />
1 teaspoon olive oil<br />

1. Leach potassium from the cauliflower. This needs to be started hours ahead of time. Hours. I had about 3 hours...4 would have been better. Rinse cauliflower head in warm water for a few seconds. Cut up cauliflower head and soak for a minimum of 2 hours (up to 4 hours) in warm water - using about 10 times the amount of water to the amount of cauliflower. I just used my biggest pot. Drain and rinse again. <br />
2. Toss cauliflower in large pot of boiling water (5x the amount of water to the amount of cauliflower), boil, covered, for about 10 minutes or until the cauliflower is fork tender. Do not drain.<br />
3. While cauliflower is cooking, saute minced garlic with butter in a skillet over low heat. Cook until garlic is soft - but don't brown it. Set aside.<br />
4. Using a slotted spoon, ladle cauliflower into your blender. Add 1 cup of cooking liquid, garlic/butter, 1 teaspoon of Mrs. Dash, Rice Dream, olive oil and white pepper (to taste). Blend until smooth. Makes about 4 cups.<br />
<br />
<b>Nutrition</b> (according to MyFitnessPal): per serving (6 servings): 64 calories, 63mg sodium, 259mg potassium (less, because of leaching).<br />

<b><span style="font-size: large;">Chicken Alfredo Pizza</span></b><br />
<br />
1 batch pizza dough<br />
4 cups cauliflower alfredo sauce<br />
2 large chicken breasts, cooked and shredded or diced<br />
1 teaspoon Mrs. Dash Onion and Herb<br />
6 ounces low moisture part skim shredded mozzarella<br />
6 teaspoons Parmesan cheese<br />

1. Prepare crusts, preheat oven to 375'<br />
2. Prepare alfredo sauce.<br />
3. Cook chicken with 1 teaspoon Mrs. Dash.<br />
4. Pour alfredo sauce on each pizza - I used about 1/2 cup each., divide chicken evenly among pizzas, spoon a little more alfredo sauce on, sprinkle one ounce of mozzarella on each pizza, then 1 teaspoon of parmesan.<br />
5. Bake for about 12 minutes - or until the topping starts to get brown.<br />
<br />
Nutrition (not including crust or sauce): I had to use the <a href="http://www.nal.usda.gov/fnic/foodcomp/Data/SR17/wtrank/sr17a307.pdf">USDA chart for sodium</a>, <a href="http://www.fosterfarms.com/products/product.asp?section=ca&productcode=72515">Foster Farms for sodium</a>, and for <a href="http://www.nal.usda.gov/fnic/foodcomp/Data/SR17/wtrank/sr17a306.pdf">potassium</a>, and MyFitnessPal for calories. 132 calories, about 240mg sodium, 202mg potassium.<br />
<br />
Grand total (per serving): 667 calories, 646mg sodium, 526mg potassium.<br />
<br />
<b>Verdict: </b>The alfredo sauce was pretty bland by itself, but when combined with everything else, the sum was greater than the parts. I will definitely be trying the crust with less salt next time - over half the sodium in this pizza comes from the one teaspoon of salt in the crust. I will also be looking for some low potassium veggies to include in the topping such as onions and peppers. I would also like to find out how much potassium is leached out of the cauliflower.<br />

4 cloves minced garlic</div>

1/3 cup sun-dried tomatoes</div>

2 cups broccoli florets (I add a bit more)</div>

1 cup frozen peas</div>

2 whole chicken breasts, cooked and diced (rotisserie works fine)</div>

1/4 cup grated Parmesan cheese</div>

Cut squash in half, remove seeds, then cook in a 375' oven for about 45 minutes. Scrape the inside of the squash with a fork to remove the strands.</div>

In a large deep skillet, saute garlic in olive oil for 1 minute. add 1/4 cup chicken broth, then tomatoes and broccoli. Saute for about 5 minutes.</div>

Add peas, chicken, and remaining 3/4 cup chicken broth. Add Parmesan cheese. Reduce heat to medium-low. Cover and simmer for about 3 minutes.</div>

Today
was our temple P-Day. It was quite interesting. We went to the LA
Temple for the 5:30 am session, and it was packed. Of the portion of the
mission that goes to the LA Temple, I think that over half were in
attendance (and on time). There were a lot of familiar faces in the
celestial room. It was great.</div>

James came back
from China and we were able to talk with him last night. He really
enjoyed his trip, and even with all the work he's having to do to catch
up with all of his AP classes, he still finds time to read from the Book
of Mormon and such (while also trying to get the world record high
score in Abadox (a random NES game)). Quite impressive.</div>

We're still working with Dawn and Nancy and that
whole family. For Elder Perry's birthday this week they gave him a few
random presents. On the more spiritual side, it seems they're doing
better. Nancy was the only one of them who came to church this week
though, which is weird because out of all of them she got the least
sleep the previous night (ie none).</div>

On Friday I was on exchanges with an Elder Greene,
who (believe it or not) is a greenie (though unfortunately his name is
just pronounced green). For somebody so quiet, he's quite good.</div>

All the news I'm hearing about changes resulting from the
influx of missionaries is weird. For instance, apparently the time in
the MTC for all these incoming missionaries has been cut by a third (2
weeks instead of 3 for English, and 6 instead of 9 for Spanish). Also,
I've heard (a rumor) that because of all of this they're cutting off the
extra week from the next transfer, thus shortening everybody's missions
by a week. Interesting happenings are about...</div>
